What exactly do we need to change on our privacy policy page on our sites, if anything?

Nothing really I would assume.

Google probably made slight changes that would not pertain to much of what we don't already abide by.

It's a safe bet that you're okay as is.

I heard it mostly applies to Google owned sites like Gmail, YouTube, and Google+. Adsense would probably notify all its member to update their privacy policy in a mass e-mail if Google feels like it is needed.
