Death note is a great Anime to watch. It's not about Fighting it's more like using your noodle.

Mirai Nikki - if you have not seen this anime, you're missing out. The chick is crazy. It's action. Don't watch any trailers or openings because they might spoil parts of the anime.
Fate/Stay Night and Fate Zero - watch Fate/Stay Night first to understand Fate Zero. Fate Zero occurs before the events from Fate/Stay Night, however, to get the best experience, you should watch Fate/Stay Night first. They're both action anime. Fate Zero is a lot better IMO.

Agree with Marc on Fate/Stay Night and Fate Zero. Both awesome shows, Also would like to add in Code Geass (a personal favorite).
As far as non-anime, I'd recommend Dexter. It's not an action show, but it's got an awesome story. The main character is a serial killer who's also a blood spatter analyst for the police, and it's pretty interesting to watch.

My favorite action animes are Highschool of the Dead and Freezing.
Highschool of the Dead is the best zombies series of all time. Freezing has a lot of fan-service but it has fights in every episode and has some of the best fight scenes I have ever seen.

Thumbs up for this recommendation. These series are definitely worth spending time on. Mirai Nikki is just crazy... but awesomely crazy, you know. If you can stand the psycho part of the girl, you'll be safe. As for F/Z and F/sn, F/Z is way above F/sn. I watched F/Z first and honestly speaking I kinda regret watching F/sn. But it was for the sake of knowing the whole setting... So it's your choice.
A new title I like quite much is Shingeki no Kyojin. Action, fantasy, adventure, a bit humor, lots of craziness, a bit gore. Based on a manga with same name. Nice one.
From this list I'd pick Steins;Gate. The beginning is very slow, but once you get over it the plot is quite twisting which is awesome. It can be funny too. I enjoyed the series.

Spring 2015 turns out to be more fun than I expected, apparently. Of course titles like Fate/stay night: Unlimited Blade Works soars above all in terms of recommendation, but there are also awesome ones like Ore Monogatari (My Love Story), and Shokugeki no Souma (Food Wars). Those are my top three right now. There are other titles such as Owari no Seraph (Seraph of the End), Plastic Memories, or Kekkai Sensen (Blood Blockade Battlefront) that are potential but not as interesting as the others in terms of plot development and delivery.
