Bloons TD paid version- try the free one first to see if you like it.
War Evolved- just like Age of War from addictinggames.com-free
Shift- Extremely fun platformer- free
Glass tower2-free and extremely addicting, you can purchase new levels.
Brick FREE- very fun brick break game, you can purchase the full version for more levels
The Weather channel- great app for checking the weather.
Cube runner- Extremely addicting game
Labyrinth LE- Free but can buy full version, you tilt your ipod to avoid holes and try to get the ball to the end.

I hear that doodle jump is one of the best paid games for the iPod touch. Angry birds is one of the top grossing too.
