I registered my first domain with hostgator about 4 months ago, but didn't realize we only get the one cpanel even though we register more domains with them?

though we can still access our addon domains through the file manager.

Can we change our cpanel email, so my newer domain which has nothing to do with ScifiFiles. can we change our emails to something more generic, mine is just like @scififiles.com, but I'm thinking I may want something more generic.

You only get 1 cPanel per hosting account, even if you have 100 domains on the same hosting account you'll only have 1 cPanel account. As for your email change you need to ask your host and they'll do it for you.

For eg. if you have a main domain (www.yorname.net) and you want change the whole sub domain from www. to forum. and get it to actualy go with that path all you have to do is create the sub domain you want.. then get the host owners to change the path of the main domain.

That's why I don't use the cPanel (email), but I understand why people use them. I try to extend my self by using my personal email as means of contact.

Well each domain on your account also has it's own email account (accounts are limited to what your host gives you) so you can have 2 domains and have 2 different emails @ each one of the domains 😉

I'll try and answer your question. Just add a domain to your cPanel addon domains and you can have a different email domain (@domain.name)
