Difference between White Hat SEO vs Black Hat SEO?

I wouldn't call black hat SEO illegal persay, but its certainly 'dodgy.' It also is frowned upon by search engines and can lead to blacklisting.

It includes method things like content automation, article spinning, sneaky redirects and keyword stuffing/hidden text (I.e: A paragraph of keywords in white size 1 font in an empty space on the page)

On the contrary, white hat are those ethical methods like "keywording" content, content optimisation and image SEO techniques (alt text, captions etc.)
 
White Hat SEO: White Hat SEO refers that work within search engines terms of service to improve a site’s search engine results page (SERP) rankings while maintaining the integrity of your website and staying within the search engines’ terms of service.

Black Hat SEO tends to be when you direct your links to spam backlink generators. This can get your barred from google search and may get you traffic but is looked down upon in the website community. Not worth taking the chance. White hat is when you actually create the backlinks manually and get involved in other sites where you may be trading ad space, purchasing ad space or posting your link on their site.
 
Black hat SEO primarily refers to the techniques like buying backlinks, keyword stuffing, clickbait, etc. White hat refers to techniques accepted by search engines.
