With all of the various hosting packages, do you setup and run your own email servers or do you use your hosting provides/third party ones?

Just use basic emailing servers that go through mailchimp/cloudlfare. I di just use the host DNS back some years ago then had to Mailchimp.

I'd never host my own email server - delivery is never very good and lots of emails bounce back.

I prefer GSuite or Office365 for my emails

Interesting, I know that you need to do something called IP Warming for providers to accept you (and other things like DMARC, SPF records and other records to validate in the email header it’s all legit) - but I’ve never had any issues with bounces (assuming you verify the emails you are sending to are actually valid).
