1) What do you think of the current order of the navigation bar, any suggested changes? Please note that I plan to also add a "Galleries" tab; though, I'm not sure where it will be placed amongst the other tabs.
2) As of now, I have plans to categorize my pictures in the following categories: Products, Fashion, Street, Landscape, Portraiture, Wild Life, Nature, Travel, Black and White, Food, Abstract, Comedy. What other categories could I potentially add (I take pictures of just about anything)?
3) In general, what do you think of the idea of adding advertisements to the bottom right (next to "Latest Photos")?

What do you think of the current order of the navigation bar, any suggested changes? Please note that I plan to also add a "Galleries" tab; though, I'm not sure where it will be placed amongst the other tabs.

Good question! First, I think this is the absolute first time I've ever seen "Privacy Policy" on a main navigation bar. I'm not sure if that's really the spot for it, because normally it just finds a home on the footer. There may be a reason you've got it there, but I just feels a little odd there. The "Start Here!" tab was very useful for me getting the first post. I like that where it is. The Galleries tab... I may recommend you place it between "About" and "Contact." However... If you were able to put your categories (from question 2) on that long bar below the navigation, that may be a good move!

As of now, I have plans to categorize my pictures in the following categories: Products, Fashion, Street, Landscape, Portraiture, Wild Life, Nature, Travel, Black and White, Food, Abstract, Comedy. What other categories could I potentially add (I take pictures of just about anything)?

Those are very original categories, and very difficult to add to. I'm thinking maybe a "People" category. It can contain pictures of people going about their daily life, considering "Portraiture" seems like the same thing, but more of 'up in the face portraits'. I'm not sure how "Landscape," "Wildlife," and "Nature" will work out, having all three due to the fact that a picture can contain both Wildlife and Nature elements. (In addition, "Wild Life" is spelled Wildlife.) I would say that you have some pretty good and broad categories picked out. Any picture you take will find a home (or two) with ease.

I think that is a great idea. Now hear me out: no one likes ads except for the site owner and the person paying for the ad, but they are a great way to monetize your site, even a little. Getting $5-$15 for a month ad rotation on the bottom of your blog is a really simple way to pay for your hosting a pocket just a little bit for compensation. You would need to implement it in a way the ad isn't obtrusive, if you know what I mean. Perhaps a light border, and don't let it be too big. That way, the user isn't completely distracted by the ad, but it's still there. If you know what I mean. So, short answer even shorter: yes, I think it would be a good idea.
