How do post tags work?

Hi all. Referring to Wordpress 3.x, what is the function of 'post tags'. How do they work, and should I add them to future posts I make on my blog?

Tags help Search Engines identify the keywords in each post made, so that you can be identified properly in search engines.

In other words, if you want your blog found and read, add tags to your post. 😉
