How do you like your Ribs?

For me personally : I love mine : Korean beef ribs, ketchup pork ribs and BBQ pork ribs. What about you?
 
Sometimes we take the membrane off but I've gotten lazy the last few times and keep the membrane on. I usually simmer the ribs first to get them nice and tender and then put a homemade rub on and from there they sit in the fridge for a while to absorb that flavor before finally either going in the oven or the grill. I make a really good homemade bbq sauce to have on the side.
 
Definitely BBQ...

Sometimes with sauce.
Sometimes without. But for the most part I like without sauce. You can actually taste the ribs better that way.

Sauce obscures the taste. But I like it too because sometimes I'm in the mood for spicy foods.
