I think one forum is good enough to make money on since having multiple forums can be really time consuming and managing multiple forums can be kind of hard for newbie admins/owners.
However, some forum topics like "tips for Poker" can be more profitable then a forum about "vegeterian recipes or saving money on gas" since the audience for Poker might be more willing to spend money on Affiliate products or clicking adsense ads you are advertising then someone who is looking for free recipes.
Maybe having multiple active forum can be a good way of determining which forums you own gets the most traffic, ad clicks, affiliate sales, and donations.
