I knew they were working on a couple but at the time I didn't know Daisy was coming back.

I don't think that would be a great idea. It didn't work well for the Jedi at all, twice. A few Jedi are good but too many breeds disaster. They are after all responsible for creating the Sith. When you have too many Jedi, there are always some that turn to the dark side or attract other dark force users. Luke realized that after Ben became Kylo Ren.
