Turning vegan to save on food budget

One family friend intimated to me that her family is turning vegetarian by next month for health purposes. Eating vegetables is healthier than meat which is the main contributory factor of cholesterol in the body. It’s funny because after a lengthy prelude, she later admitted that vegetables are much cheaper and they could save a lot. So that’s it – turning vegan to save money.
 
Well, I am guessing they don't understand that even in a "vegetarian diet", you still technically need meat every now and then. Meat supplementation every now and then will compliment what you eat, by what the meat provides for your body when it breaks it down. Infact there are a number of amino acids that your body cannot produce without eating meat. Go without it, and even though it would be "healthy", you still wouldn't be completely healthy, even with foods like beans that have some good vegetable proteins that can help with not eating a ton of meat.
 
Vegans spend WAY more on groceries than a typical meat eater. Seems like you’ve got to be rich to eat healthy.
