Does anyone know a quick way of doing this? I tried downloading patches but that didn't seem to work, it is a subsilver2 based style also and wondered if it is even worth updating as when 3.1x is released subsilver2 will not be supported or catered for.

There is no quick way of updating without downloading all the patches and doing the edits.
Subsilver2 will not be distributed in the default phpBB package but will be maintained by the developers.

You could just go through the changes and just do important ones. That will save time but it would mean that there may be a few problems still as the style wouldn't be fully up to date.
Failing that, find/use a new style or make your own if you have the knowledge and time to make one.
