Can anyone tell me the difference between managed and unmanaged VPS hosting? Once my forum gets busier, I will need to switch to VPS from shared hosting but I want to know the difference in the VPS options.

With Unmanaged you setup everything and maintain the server systems, like installing all the system (eg. apache, mysql, nginx) you need in the server. Managed VPS usually comes with a control panel and the host will install all systems you need. With Managed VPS they will also provide hosting support.
 
For different package is different, according to what kind of website you want to build, the higher price is not always better, suitable is best.
 
If you have never managed an unmanaged VPS, don't use this option to run a live website, there is a lot of things to learn and something WILL go wrong. But i would encourage you to get one for testing and practicing. In the meantime use a Managed VPS for your forum.

I would definitely recommend starting off with a managed VPS, unless you're a Linux-pro already. This will allow you to learn more about running a VPS, and tinkering around until you feel comfortable to maybe experiment with an unmanaged VPS - and even then, I'd recommend just using it as a sandbox/test server at first and not as a production environment.

Bare-metal prices can be extremely tempting, but there is a LOT of work that goes into managing that server thereafter

Managed is when the hosting provider basically sets it up with your desired settings (ex: setting up a VPS for a Wordpress site), and takes care of basic security, maintenance, and future updates.

Unmanaged is a raw Linux server (most common is usually Ubuntu) and you must set up any dependencies like PHP, NGINX/Apache, SQL, etc, and you're responsible for security, ongoing maintenance & updates, etc.

I have Linux sysadmin skills so I always go for unmanaged, but be aware that even though it's cheaper you will spend hours setting up servers and maintaining them over time, so if the price for managed is within your budget you may like that more, especially if you can't use Linux CLI quickly & safely.
 
Each business has different web hosting requirements. Ask the hosting provider regarding the kinds of hosting environments they provide? Also, ask them regarding their policies in case you want to scale up or down.
