I have a surplus of zucchini and decided to try out a few different recipes this year. With how many I have, I'm looking for more and tastier variations of how to make them.
Do you have a favorite zucchini recipe? How do you season and cook yours?
YES! I make a wonderful zucchini dish and it's easy. I don't know amounts so it's kind of a guess and you can add more or less for your own taste.
Ingredients:
1/2 Cup Diced Sweet Onion
1 Zucchini, diced
1/2 package or full package of cherry/grape tomatoes, cut each in half
Basil, fresh preferred, chopped or torn but you can use dried as well
Sea Salt
1 tsp fresh garlic, minced
1 TBSP Olive Oil
In a pan, heat the olive oil and saute the onion until almost golden and then add the zucchini. Stir occasionally for a few minutes then add the rest of the ingredients except garlic, add that toward the end. Once the tomatoes start to break down then add the garlic and cook for a minute or two longer.
I also use this recipe for yellow crookneck squash and it's very good.
